Buffalo Fajitas

I still haven’t killed off all the leftovers from this dish! Obviously, the dish itself is easy enough to prepare, but the key ingredient is the buffalo meat. Just to give you an idea of the nutritional value, here’s a little table to compare with some other proteins that are out there:
